Marinade
Paneer

Hung curd or thick yogurt

To assemble
Flour tortillas

In a mixing bowl, combine the hung curd, ginger-garlic paste, Aaahara's garam masala, and a pinch of salt. Whisk until smooth. Add the paneer cubes and toss gently to coat them thoroughly. Let it marinate for 10 minutes.
Heat 1 tablespoon of oil in a non-stick pan over medium-high flame. Add Aaahara's red chilli powder and the marinated paneer and sauté 3-4 minutes until the edges turn slightly golden and the raw aroma of the spices dissipates. Remove the paneer.
In the same pan, add the sliced onions and bell peppers. Sauté on high heat for 2 minutes until they are slightly charred but still retain a crunch. Remove and set aside.
Wipe the pan clean and place it on a low flame. Place one tortilla in the pan. Spread a generous layer of cheese over one half of the tortilla. Top with the tandoori paneer and sautéed vegetables. Sprinkle a little more cheese on top to act as a glue.
Fold the tortilla in half to form a semi-circle. Press down gently with a spatula. Cook on low-medium flame for 2-3 minutes until the bottom is golden brown and crispy.
Carefully flip the quesadilla and cook the other side for another 2 minutes until the cheese is completely melted and gooey.
Remove from the pan, let it rest for 30 seconds, then slice into wedges and serve hot with mint chutney.
